
Salmon Corn Chowder
Ingredients
- .5 stick butter
- 2 medium sweet onions chopped
- 1 can wild-caught salmon 15oz
- 1.5 cups red potatoes eyes out, skin on, chopped or shredded
- 3 cups chicken broth
- 2 cans creamed corn 15oz
- 1 tsp black pepper ground
- 2 tsp chives chopped
- 1 tsp dill weed chopped
- 2 tbsp sour cream
Instructions
- On a medium burner, melt butter, add sweet onions, saute 5 minutes.
- Add potatoes and chicken broth, bring to a full boil.
- Reduce heat to simmer, boil until tender (about 10 minutes).
- Add salmon, corn, creamed corn, pepper and spices. Cook 5 more minutes.
- Add toppings if desired. Goes great with corn bread!
